Here’s a recipe for a flavorful Bruschetta – but of course you can vary the ingredients based on what is available and whatever pleases your palette! I like to use a variety of tomatoes for different sizes, color and flavor – whatever happens to be ripe at the time.

Butternut Squash Salad
This is a delicious salad. It was the signature salad at my restaurant, Dragonfly Cafe. Some customers loved it so much, as soon as we would see them comng in the door we would start making it for them. I hope you love it too!

Caesar Salad with Grilled Peppered Chicken Breasts & Garlic Croutons
Here’s a Caesar Salad with a super easy dressing – no anchovies and no raw egg. Use prepared mayonnaise as the base and the Buttermilk Ranch Dressing Base from Penzeys Spices – one of my favorite stores and a great place to shop for all kinds of delicious spices, herbs and seasoning mixes.


Cranberry Chicken Salad
Lots of people have asked for this recipe – so here it is! Back in the Dragonfly Café days, I considered renaming the restaurant “Colleen’s Cranberry Chicken Shack”.

Fresh Pea, Asparagus & Arugula Salad with Grilled Salmon or Chicken and Shaved Parmesan Serves 2
This salad epitomizes spring when young peas and asparagus are at their peak. Arugula, with it’s peppery, slightly bitter taste, provides a nice complexity to the salad.

This is a healthy salad that makes an impressive presentation. It goes together fairly fast.

Saffron Scented Summer Salad with Feta and Olive Oil Serves 6-8
Last summer, when corn, green beans and cherry tomatoes were in full flavor, I put together this colorful, flavorful salad.


Shrimp, Tarragon & Chive Salad with Creamy Lemony Dressing on Butter Lettuce
This is a light, refreshing, pretty salad – perfect for a brunch, lunch or light dinner on a hot summer evening. Simmering the shrimp in water seasoned with Old Bay imparts great flavor into the shrimp. Since the shrimp only boil for a short period of time, the kitchen will stay cool – which is all so important in Arizona in the summer!
