Cranberry Chicken Salad

Lots of people have asked for this recipe – so here it is!

Back in the Dragonfly Café days, I considered renaming the restaurant “Colleen’s Cranberry Chicken Shack”, because we made loads of this popular salad. Every day we roasted at least 12 whole chickens and pulled all the fresh roasted meat to use in this delicious salad. We all made this recipe so many times, I’m sure everyone still knows the recipe by heart.

A Rotisserie Chicken from the store works great – quick and delicious! This Cranberry Chicken Salad makes a great sandwich and also works well on a bed of mixed greens.

Cranberry Dressing
1 cup mayonnaise
2 Tablespoons apple cider vinegar
2 Tablespoons sugar
1 teaspoon Dijon mustard
¼ teaspoon salt

6 cups shredded chicken (from 1 whole roasted chickens)
¾ cup dried cranberries
3 ribs celery, diced
1 cup pecans, chopped and toasted

1. Combine the dressing ingredients and set aside.

2. Combine the chicken, cranberries, celery and pecans. Add the dressing and mix to combine.
