When it comes to selecting an avocado, the ideal avocado is firm with a slight give – not mushy and not rock hard. If you find the avocados available at the market are not ripe, just put them in a bowl with an apple and they should be perfect the next day. The apple hastens the ripening of avocados. Once the avocado is at the perfect stage of ripeness, put them in the fridge and they should stay perfect for about a week. And remember to wash the outside skin of the avocado – even though you are not eating it - so that you don’t contaminate the inside of the fruit with any bacteria that may be on the outside when you cut into the avocado.
